Beef and Veggie Ramen

 

Kariim & I are ramen lovers!!! And turns out, so is our Ellie ūüôā ¬†

Other than the delicious flavor, one of the other reasons we love a ramen bowl – is because it’s a great way to get a healthy intake of nutrients in one dish. ¬†Healthy protein & veggies.

This particular recipe took all of 30 minutes to make.  Kariim made the flank streak in advance, so that helped speed up my process.   Chopped & sautéed all of my veggies, mixed up the soy sauce, & boiled the noodles.  Pretty simple.

Ingredients: 

  • 1 pound flank steak
  • 3 packages of ramen noodles (we found an Organic Ramen at Whole Foods)
  • 3/4 cup of low sodium soy sauce
  • 2 tablespoons of hoisin sauce
  • 2 1/2 tablespoons of minced garlic
  • 3 – 5 tablespoons of olive oil¬†
  • Your choice of assorted vegetables: I used – organic bok choy, broccoli, baby bell peppers, red onion, green onions
  • 2 tablespoons of sesame oil¬†
  • 1 cup of low sodium beef broth
  • 1 tablespoon of minced ginger¬†
  • 1/2 cup of brown sugar
  • 1 teaspoon of red pepper flakes¬†

 

Cooking Instructions:

  1. ¬†FLANK STEAK: ¬†¬†Marinade meat – in a bowl, pour 1/4 cup of soy sauce, hoisin sauce, and 1 tablespoon of minced garlic. ¬†Thinly slice the flank steak. Place sliced steak in the marinade and let sit for 20 – 30 minutes. ¬†NOTE – ¬†click this link to see Kariim’s recipe¬†Flank Steak ¬†¬† **Another option: Being that my flank was already prepared, for another dish. ¬†I marinated the sliced steak in the sauce as I was preparing the other ingredients. ¬†¬†
  2. While the meat is marinating, in a small bowl Рpour soy sauce and brown sugar. whisk together until sugar is dissolved.  Sit aside.
  3. In a large pot, boil water for noodles. 
  4. Prep & cook the veggies. Adding the leafy vegetables last.  Cook all over medium high heat until crisp tender then transfer to a bowl or plate & sit aside.
  5. Place noodles in boiling water. Cook until noodles have slightly softened. (Don’t over cook)
  6.  Remove meat from marinade and drain off any additional marinade.
  7. Add a tablespoon of olive oil to pan. Heat oil until warm then add steak to the pan. Cook steak to your liking. Once steak is to your liking, turn heat down to low.
  8. In the same skillet, add the sesame oil and place vegetables back in the skillet.
  9. Remove noodles form boiling water & drain them.  Place noodles in the skillet with other ingredients. 
  10. Pour in the soy sauce + brown sugar mixture. 
  11. Stir until all ingredients are covered.  Continue to cook in all ingredients.  
  12. Top with red pepper flakes.
  13. Plate & Enjoy!
