Kale, Strawberry, and Avocado Salad with Chia Seeds

The super-food KALE! Does it need an introduction? Kale is a very powerful green leafy veggie. It’s full of fiber and packed with so many vitamins & minerals. It’s delicious when paired with a sweet fruit. We’ve created own tasty dressing to go along with it.

 

Kale Strawberry Avocado Salad

 

Ingredients:

For the salad:

  • 1 bunch of organic kale (clean and remove stems)
  • Pinch of sea salt
  • 2 pinches of chilli powder 
  • 1 cup of strawberries (sliced)
  • 1 avocado (chopped)
  • 1/2 teaspoon of chia seeds
  • 1/4 cup goat cheese (optional)
  • For the dressing:
  • 1 tablespoon of honey
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • a pinch off salt
  • fresh ground pepper to taste

Instructions:   Kale Salad Demo 

  1. Put kale in large bowl.  Add a pinch of sea salt and 2 pinches of  chilli powder  over the kale and massage with your hands until the leaves are darker in color or until they feel tender.
  1. Add the sliced strawberries & avocado.
  1. In a small bowl  combine the olive oil, lemon juice, &  honey.  Whisk until mixed well.
  1. Pour the dressing over the salad and toss until salad is completely coated.  Begin the sprinkle chia seeds and toss again.  

Note: This salad is great with grilled chicken breast.
