Black Bean Corn Salsa

Anytime is the perfect time for making salsas! I like to make many versions from fresh tomato salsa, tomatillo salsa, fruity salsas, to hearty salsas like this black bean corn salsa.
The reason I like this one, is because it can be enjoyed as is with your choice of chips, a condiment served with meat, or rolled in a wrap made into a healthy burrito.
I wish I had gotten a photo on the first day…..though the day 2 flavors are even better once the ingredients have settled.
I enjoy the color combo and the black beans + corn compliment each other well. Adding the other flavor – packed ingredients to create the perfect salsa.
Ingredients: (your choice of fresh or organic canned or frozen)
- 1 small tomato dice, well drained
- 1 1/2 cups of corn (well drained if canned)
- 1 cup of black beans
- 2 tablespoons of chopped red onion
- 2 tablespoons of chopped bell pepper (green + red)
- jalapeños chopped (to your liking)
- 2 tablespoons of fresh lime juice
- 1 tablespoon of olive oil
- 1/4 teaspoon of salt
- 1 tablespoon of fresh chopped cilantro
Prepping Instructions:
Note: if using fresh beans , allow them to soak over night or at the least several hours before cooking. If using canned, it’s important to rinse them throughly.
- In two separate pots, warm/cook – beans and corn.
- Once both are done, let both sit until cool.
- In a large bowl, mix all ingredients in a medium bowl and cover.
- Refrigerate at least 30 minutes or until ready to serve.
