Chicken Tortilla Soup

This soup is something the entire family can enjoy! It’s quick to make, flavorful, & filling!! Full of protein- We absolutely loved it!

  • 1 medium sized yellow onion CHOPPED
  • 3 cloves of fresh garlic, minced
  • 3 scallions thinly sliced
  • 1 large Organic tomato
  • 1 jalapeño chopped (HOTT- use to your liking)
  • fresh cilantro
  • 1 lime sliced
  • 2 tablespoons of olive oil
  • 2 teaspoons of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of smoked paprika 
  • 1/2 teaspoon  of  kosher salt  
  • 1/2 teaspoon of fresh ground black pepper
  • 1 cup of  corn (fresh or canned)
  • 1  1/2 cups  of black beans (fresh) or canned (if canned-drain and rinse)
  • 2 boneless skinless chicken breast
  • 3 cups of Organic chicken broth
  • 1 avocado (optional)
  • low calorie sour cream or plain yogurt  (optional)
  • tortilla chips 


Cooking Instructions:  

  1. Place chicken breast on cutting board.  Chop chicken breast into small pieces. 
  2. Put the chopped chicken breast in a bowl, coat with 1 tablespoon of olive oil, season with the kosher salt and fresh ground pepper.  Rub with hands until the salt and pepper has covered the chicken. 
  3. Heat  a large pan over Medium- High heat and cook the chicken.  Once done, sit aside. 
  4. In a large pot, pour in 1 tablespoon of olive oil and heat oil over medium heat.  Begin to Sauté  yellow onions and garlic in oil until soft. Stir in chili powder, cumin, smoked paprika, kosher salt,  tomatoes, scallions (save some scallions for garnish) and broth.  
  5. Pour in black beans, corn and chicken breast. 
  6. Bring to boil, and simmer for 45 minutes. 
  7. Serve soup in serving bowls, and top with your choice of avocado, scallions, cilantro, +  crushed tortilla chips. 
  8. Enjoy! 

NOTE: THIS CAN ALSO BE PREPARED USING A CROCK POT.  To avoid over cooking-  be sure to cook on low heat to save nutritional value.

We had our choice of  blue corn chip tortillas & fresh spinach tortillas that we put in the oven until crisp.  #FarmersMarketFinds

**REMEMBER: Eat for YOUR fitness goals!  This soup can be enjoyed without the tortillas, cheese or  sour cream 🙂  we used a plain yogurt – add fresh squeezed lemon juice to it and you’ve got sour cream.

This looks so good that I’m already wondering if this dish is low cal. enough for seconds. Just kidding.
