Kale, Strawberry, and Avocado Salad with Chia Seeds

The super-food KALE! Does it need an introduction? Kale is a very powerful green leafy veggie. It’s full of fiber and packed with so many vitamins & minerals. It’s delicious when paired with a sweet fruit. We’ve created own tasty dressing to go along with it.
Ingredients:
For the salad:
- 1 bunch of organic kale (clean and remove stems)
- Pinch of sea salt
- 2 pinches of chilli powder
- 1 cup of strawberries (sliced)
- 1 avocado (chopped)
- 1/2 teaspoon of chia seeds
- 1/4 cup goat cheese (optional)
- For the dressing:
- 1 tablespoon of honey
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- a pinch off salt
- fresh ground pepper to taste
Instructions: Kale Salad Demo
- Put kale in large bowl. Add a pinch of sea salt and 2 pinches of chilli powder over the kale and massage with your hands until the leaves are darker in color or until they feel tender.
- Add the sliced strawberries & avocado.
- In a small bowl combine the olive oil, lemon juice, & honey. Whisk until mixed well.
- Pour the dressing over the salad and toss until salad is completely coated. Begin the sprinkle chia seeds and toss again.
Note: This salad is great with grilled chicken breast.
