Protein Bowl

Need a serious punch of protein to start your day? Try our tasty protein bowl.  We made the bowl as breakfast meal prep for the week.  It’s quick, easy, tasty and full of nutrients. 







  • 10 organic eggs (3 whole and the rest whites)
  • 1 can organic black beans (unsalted)
  • 4 shiitake mushrooms (chopped)
  • 2 scallions (chopped)
  • red onions (to your liking)
  • 1/4 red bell pepper (chopped)
  • 1/4 green bell pepper (chopped)
  • 1 small organic vine tomato (chopped)
  • 2 cloves fresh garlic (chopped)
  • 1 cup organic spinach (finely chopped)
  • *Add kosher salt to taste – if needed


Cooking Instructions:

1. Crack and whisk eggs. 


2. Heat non stick pan and add the peppers, onions, garlic, mushrooms.  Allow the ingredients to sauté for 3 minutes. ADD black beans. 



3. Allow the ingredients to cook 2 more minutes, then add eggs.  Cook until eggs are done.  Add spinach last.  Stir all ingredients until blended well. 




4.  Meal Prep: evenly disperse into meal prep containers or  make small bowl to enjoy right away 🙂

NOTE: After making the first bowl, we thought to use some of our already prepped (grilled) chicken breast to add to it. A serious protein bowl.

You can get creative and add additional protein sources like, chicken breast, bacon, ground turkey, etc.

This is on my meal prep list for next week. And, I will be cooling all my food on top of the refrigerator from this point forward 🙂
